Sun Tea from Sad Fruit

Drink · Vegan · 1–2 days

Don’t throw away your sad fruit — turn it into beautiful, naturally sweet sun tea. All you need is fruit, hot water, and sunshine. No sugar, no waste, no chemicals, just nature doing her thing.

Ingredients

  • 2–3 cups of ripe or overripe mixed fruit (berries, peaches, apples, citrus, etc.)
  • A handful of fresh mint leaves (optional)
  • 1 tsp dried hibiscus flowers (optional)
  • A few dried rose petals (optional)
  • Boiling water

Method

  1. Cut fruit into 1-inch pieces. Remove any bad spots but keep the peels on.
  2. Fill a large mason jar about a third full with fruit.
  3. Add herbs or flowers if desired.
  4. Fill the jar with boiling water.
  5. Place in a sunny spot for 1–2 days.
  6. Strain, chill, and enjoy cold — or mix with sparkling water for a fizzy treat.
